Excellent Boning Knife! High quality and very sharp. Have already used it to debone Boston Butts and Hams. I am very satisfied with this purchase and feel it was a bargain. Can't wait to get the Cleaver offered by LedgeON next.

I expected this to be a decent knife with a sharp edge; it arrived DULL and can't be sharpened to a decent edge. I'll nEVER buy another piece of steel from this manufacturer; or Japan for that matter.

Two negative comments first and then the good:1) Knife had surface rust on it which indicates that it is steal - possibly the high carbon steal that the manufacturer claims. With claims like "unique forging process to optimize the blade's sharpness, edge retention and corrosion resistance" one has to wonder, but this has missed the mark of "corrosion resistance."2) The knife doesn't come razor sharp out of the box. It is sharp, but I was able to put a better edge on it and improve the safety and easy of use when working with the knife. Sharp knives are key to a safe and effective kitchen.Neutral - there is no sleeve, blade guard or sheath. The product is not listed as coming with one, but the buyer should consider this when purchasing. Where do you plan to store this knife so that both you and the knife are protected?Good - good solid weight and the fit and finish are very nice.The product description offers a 100% gaurentee. I am not sure that it is worth pursuing that for the issues noted above (minor corrosion and edge sharpness), so I cannot descripe the effectiveness of that.

I am not a professional cook by any means, but my husband and I both hunt and we butcher our own deer. We raise our own pork, and often have the butcher that we use leave several cuts extra large for big family gatherings and such, and then we trim those ourselves too. We are more than handy in the kitchen. We also appreciate good tools, LedgeON has more than met both of our expectations with their new 6 inch Professional Boning Knife. The knife arrived in a great box that you can use for storage, while some folks like us may use the knife enough that we'll store it on a wall strip for easy access, others will want to clean it and keep it in the box because of it's razor sharp edge. Despite my husband and I really putting it through the motions this last couple of weeks it hasn't needed to be sharpened yet. It feels great in your hand. My husband has much larger hands than me and we both agree that the heft of the knife is comfortable and makes it easy to use. Balance is important in a boning knife, for me anyways. The last thing you want is an unweildy knife slipping and gouging your cut of meat, or worse yourself! While I might save money by cutting my own meat, I still want my steaks and chops to look good and this knife is something any professional would be happy to use. It easily cut through the toughest of connective tissues and we were able to slice chicken paper thin for stir fry. The blade will stand up to years of honing and the handle is sturdy and of great quality too. I hope that LedgeON expands on their knife line, I'd love to build an entire set of this quality! I was provided a sample of this knife, but I'd gladly purchase others. This is a high quality knife that will last for years.

My family has been using the LedgeON pizza cutter for months, and we all noticed that it really is professional quality. So, when the brand decided to expand to knives, I wanted to try out their boning knife, especially since my brother and I have been thinking about getting into sailing and fishing. So we need a decent cleaver and boning knife. I saw that this knife is Japanese, and they're notorious for making amazing knives, katanas, etc. I also have a Japanese chopping knife already, so I knew I wanted to try it.I don't exactly have a freshly caught fish on hand, so we tried this knife out on a tomato. It cut incredibly smooth. When I first opened it, my mom kept saying how well it was packaged, and how it would be a really nice wedding shower gift to someone who was really into cooking.I attached some photos of my mom chopping a tomato, hopefully you can see how we were able to get a really clean, thin cut very easily. The handle is attached so well that I can also imagine this being very easy to sharpen whenever you need.I am a Top Amazon Reviewer. I could have just kept it and not taken my time to write anything, but I truly believe that this company finds great products that are professional quality, and I wouldn't give anything a 5-star unless they truly deserved it.
